cupcakes with spiderweb icing pattern

Ingredients for the cupcakes:

  • 125g butter at room temperature cut into large pieces
  • 125g self-raising flour
  • 125g caster sugar
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 2-3 tbsp milk
  • 2 large eggs

Ingredients for the icing:

  • 150g icing sugar
  • Warm water
  • Brown/black tube of writing icing
  • Cocktail stick

Baking Instructions:

  1. Before you begin, make sure that all little hands are clean and clothes are protected.
  2. Preheat the oven to 180°C, gas mark 4.
  3. Line a 12-hole muffin tray with cupcake cases.
  4. Put the butter, caster sugar, self-raising flour, eggs, vanilla extract, milk and baking powder into a large bowl and mix them together thoroughly using a wooden spoon or an electric hand whisk.
  5. Divide the mixture evenly into the cupcake cases and then pop them in the oven for approximately 20 minutes or until they are well risen and firm on top. Insert a metal skewer to see if it comes out clean to make sure the cakes are cooked. Pop the cupcakes onto a wire rack to cool.
  6. To make the icing, sift the icing sugar into a bowl and gradually stir in some warm water to get a smooth consistency. You don’t want it too runny or else you won’t be able to make your spider’s webs.
  7. When the cakes are completely cold, spread on a little icing right to the edges.
  8. Using a writing icing tube, draw 3 circles starting with a small one in the middle and radiating outwards. Then take a cocktail stick and drag the circles from the middle to the edge of the cake to create your webs.

Alternatives:

  • For chocolate cupcakes replace 25g of the flour with cocoa powder
